I haven't written anything in a couple of days, and even today's post will be short. I have a simple remedy for when misery strikes, be it cold or flu, being frozen to the bones after a long day out (skiing or otherwise) in wintry weather or even when we are sitting inside watching nasty weather rage outside and want some extra warmth and comfort. Chicken soup is that magic potion that makes a cold more bearable or thaws us out after skiing. I "indianized" a basic chicken soup just a bit, not only to add flavor, but also to tap into ayurvedic properties of certain spices, but it is still a very simple and fast dish to prepare.
Cut up chicken into bite-sized pieces.
Chop an onion, slice 4-5 carrots. Carrots are high in vitamins, so the more the better.
Start boiling water in a pot, then add chicken.
At the same time, add olive oil in a pan and lightly cook onions and carrots.
Add ginger-garlic paste and turmeric to chicken stock. I also like garlic in general, so I am adding a few extra fresh garlic slices.
Add onions and carrots. Salt a bit. Let soup cook until chicken is tender.
Add noodles. Unfortunately, we didn't have any green beans today, but it is a good addition to the soup as well - for some green color, some crunchiness, and more vegetable goodness. Bean sprouts are another alternative. Taste the soup, and add more salt if needed.
Some fresh ground black pepper is a good idea as well.
