Today was a cooking class at TAG, subject - roasting. 3 delicious dishes to watch chefs make, 3 recipes provided to take home, mixology lesson at the bar with cocktails to sip, and a delicious lunch - that's TAG University.
This is my second time I am attending such a class. Last class was on cooking with chocolate (not what you think! cooking savory dishes with chocolate) and wine pairings. It was on a Saturday right before Valentine's day, and it was delightful.
Class starts in the kitchen, where chefs demonstrate how they execute the recipes for this lunch. Chef Sam starts with the ribeye dish - roasted ribeye and pan-roasted root vegetables.
Chef Troy takes on a roasted leg of lamb.
And chef Sean does the roasted fish.
We also get a tour of the kitchen and chefs are answering any of the questions the class has, and we also get to taste a few ingredients as cooking goes on. I love this part because it demystifies a professional kitchen for us home cooks. It is very encouraging to see how these guys do their magic and that it isn't really all that hard and fancy and we all can cook high quality food at home.
After lesson in the kitchen, we move on to the bar, where Moe talks about bartending and mixing drinks and anything else that is related, or not. Today was actually very fun because we not only got to see him do his magic, but we also got to do our own cocktails! Yay! Stations were set up all around the bar with tools and ingredients and we do as he does and we make our own drinks! Super cool.
Since we get to start drinking before eating (but after noon!), I do feel a little buzzed after these cocktails on nearly empty stomach... but here comes lunch.
Course 1 - roasted ribeye with roasted root vegetables. This was served in a communal manner with big dishes brought to the table, and we help ourselves to the food. It is very social and very fun and very informal. Love it.
Course 2 - Tacos with roasted leg of lamb and other delicious taco trimmings. With this course again food is brought to the table and we ourselves get to assemble our own tacos. A little messy, as tacos often are, but fun. And yummm...
Course 3 - roasted fish on a bed of lettuce with ponzu sauce. This is served on individual plates, so each person gets their own. This fish is cooked perfectly and so delicious. I only wish I could serve myself some more as was the case with the first two course where we get to help ourselves to as much as we wanted.
Few sweets were served at the end, and this concludes this class. If only all my classes in college were this delicious!
I don't yet have information on the next class date and subject. But whatever it is, I am sure it will be a great event.
