Sunday Morning - Waffles

I recently got another kitchen "toy" - a waffle pan, and this morning is the time to play with it.


I have been eyeing it for awhile in Williams-Sonoma catalog, and I finally placed and order and few days later a nice man in brown uniform arrived at the door with it. Here is the listing on Williams-Sonoma's website: click here. A basic recipe is included.

First, more about this pan. It is made by Nordic Ware - I have eleblskiver (read previous post here) and omelet pan from this brand, and I am happy with them. Just like those two pan, this pan is made of aluminum and has non-stick coating. This pan is essentially two interlocking griddles.



The design is very simple yet very smart - the two part completely separate for easy handling and cleaning.



Now on to making waffles. The recipe for the batter is very much similar to the one for ebelskivers.

Melt some butter, separate the eggs.


In a bowl mix dry ingredients - flour, baking powder, freshly-ground nutmeg, salt.


In another bowl mix wet ingredients - milk, butter, egg yolks, vanilla extract.


Beat the egg whites.


Mix wet ingredients into dry ingredients.


Then carefully fold egg whites into batter, do it in batches.


Heat up both parts of the pan. Spray with some vegetable oil.


Pour in the batter.


Place the top griddle on the bottom one, interlocking them together, and flip.


Cook for two minutes, flip and cook on the other side for two more minutes.


It is done! Clearly, I need to add more batter for a full waffle.


This can be eaten with maple syrup, honey, fruits, jams, or anything else you want. It is very similar to ebelskivers in taste and airy texture (thanks to beaten egg whites), but it is actually much easier to make than ebelskivers.
